Fall Apple Cinnamon Muffins

Happy Friday everyone! Unfortunately the weather here has been quite gloomy the past few days, but that doesn’t stop me from enjoying some fall goodies! To bring a little fall warmth into our bellies I decided to whip up apple cinnamon muffins, which would be a great addition to breakfast, brunch, or even on their own as a quick, healthy snack. 1 1/2 cupsĀ organic wheat flour

3/4 cup organic sugar

1/2 tsp salt

2 tsp baking powder

1 tsp ground cinnamon

4 tbspĀ vegetable oil

2 eggs

2/3 cup milk

2 apples – peeled, cored and chopped



Heat oven to 350 degrees and grease 12 muffin cups or line with paper liners.

Stir together the flour, sugar, baking powder and cinnamon. Then mix in the oil, eggs and milk. Fold in apples and spoon the batter evenly into the prepared muffin cups.

Bake in the oven for 15-20 minutes or until toothpick comes out clean. Top off muffins with some additional cinnamon and enjoy!
